Salmon Cucumber Couscous Salad<br>

*4 cups Water
*2 cups Couscous

*2 6 oz. cans Nelson Seatreats Coho or Chinook Salmon, drained and flaked
*1 lg. Cucumber, chopped
*4 stalks Celery, chopped
*2 Tomatoes, chopped
*2 Tsp. dried Dill or 1 Tbsp. Fresh Dill
*2 Tbsp. Cilantro, chopped
*1/2 cup Extra Virgin Olive Oil
*Juice from 2 Small Lemons
*1-3 Tbsp. Poppyseed Dressing
*Vinegar to taste


~ Bring water to a boil, stir in couscous, cover, let stand for 3-5 minutes. Fluff with fork, rinse with cold water or set in ice to cool. Whisk together remaining ingredients, toss to coat.
